Summer feelings – with these 6 healthy breakfast ideas
Scientific studies found, that having breakfast is no necessity to start the day with enough energy, because our blood-sugar levels are still high for the first hours after getting up.
However, for many of us having breakfast is simply part of an attitude of life and having a healthy breakfast sure is no bad idea. Now in summer, during the holiday season, we have even more time for it. For that reason, we’ve put together some healthy, summer breakfast ideas. They are also all suitable for a meal after your morning run or morning walk.
Overnight Oats
Oatmeal is high in fibre, which keeps your blood sugar levels stable and you stay full longer. It also contains many B vitamins for good energy and concentration. Instead of a common, warm bowl of oats, cool overnight oats are the perfect recipe for summer.
Recipe:
In the evening, mix one cup of rolled oats with one cup of milk (you can also use plant-based milk), one tablespoon of nut butter and one tablespoon of chia seeds in a big glass. Store the mixture in the fridge. In the morning, mix in a quarter of a cup of fresh blueberries for additional vitamins.
Peach-Waffles
Take advantage of this seasonal fruit and use it as a topping for simple and delicious breakfast waffles. These waffles taste like dessert, but are still healthy. We promise.
Recipe:
You need two whole-grain waffles – you can buy finished ones, or make some using a simple recipe (for example this one: https://www.allrecipes.com/recipe/20513/classic-waffles/). Top the waffles with one tablespoon of peanut butter (or any other nut butter), one peach cut into slices and finish with some honey.
Mango Lassi
A very simple, fruity and delicious summer drink. Perfect for starting your day.
Recipe:
Blend two cups of Greek yogurt, one sliced mango and add as much water as needed for the right consistency. You can also add some honey for sweetness.
Greek Yogurt with Berries
Greek yogurt is thicker and has more protein, than normal yoghurt. Protein and calcium combined with little calories make it the perfect base for this recipe.
Recipe:
Put 1 cup of yogurt into a bowl, wash and slice 1/2 cup of blueberries and 1/2 cup of strawberries. Place the berries on top of the yogurt and put some honey on top of it.
No-Bake Energy Bites
They taste like cookies and are finished in a few minutes. For a lower-sugar version, you can leave out the chocolate chips.
Recipe:
Combine 1 cup rolled oats, 1/2 cup coconut flakes, 1/2 cup peanut butter (or any other nut butter), 1/2 cup ground flaxseeds, 1/2 cup chocolate chips (optional), 1/3 cup honey and 1 teaspoon vanilla extract.
Mix all ingredients in a bowl. Form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set for about 1 hour. Enjoy!
Strawberry-Watermelon Smoothie
Watermelons and strawberries are a refreshing combination and therefore ideal for hot summer mornings. This smoothie recipe contains a lot of nutrients.
Recipe:
Combine 100 grams of strawberries, 1 tbsp of honey, 150 grams of yogurt and 50 grams of chopped watermelon in a blender and blend until smooth. Pour the blended smoothie into a glass and top it with some chia seeds.
